Peach Cobbler Cookies
Ingredients
- 1 prepared pie crust (homemade or store bought)
- 1 small can of peaches
- 1/4 cup brown sugar
- 2 tablespoons of white sugar
- 1/4 teaspoon of cinnamon
- Dash of nutmeg
- 2 teaspoons of cornstarch
- 1 teaspoon lemon juice
- 1 tablespoon butter
- 3/4 cup sifted powdered sugar
- 1 teaspoon softened butter
- 2 teaspoons water
- 1/2 teaspoon cinnamon
- 3” circle cookie cutter
- Parchment Paper1 Cup Sugar
Directions:
- Preheat oven to 400 degrees.
- Drain liquid from peaches into a medium sized bowl. Rough cut peaches into small pieces. Add pieces back to liquid in bowl.
- Add sugars, cinnamon, nutmeg, cornstarch, lemon juice to the bowl and stir.
- Put peaches in a pan on medium heat and add butter. Cook until thickened and set aside.
- Unroll dough and cut out circles with cookie cutter. Gently fold about ¼ up around the edges.
- Spoon a heaping tablespoon of the peach mixture into each circle.
- Place on a parchment lined pan and bake 15 minutes. Let cookies cool completely.
- Combine sifted powdered sugar and butter in a bowl and mix well. Add water and cinnamon and stir until smooth. (It should be kind of thick)
- Put glaze into a small ziplock bag and snip off a tiny corner. Drizzle on completely cooled cookies. Enjoy!
