Creole Shrimp Cups

Ingredients

  • 30 mini phyllo (fillo) shells
  • 1 pound cooked shrimp
  • 2 tablespoons mayonnaise
  • 1 teaspoon Old Bay seasoning
  • 2 tablespoons chives, finely chopped
  • 2 tablespoons for garnish
  • 1/2 cup mayonnaise
  • 2 teaspoons ground mustard
  • 2 teaspoons Louisiana-style hot sauce
  • 1 teaspoon Old bay seasoning
  • 4 teaspoons ketchup
  • 2 tablespoons parsley
  • 2 teaspoons fresh lemon juice
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 350°F. Lightly spray baking pan with cooking spray. Fill with mini-phyllo cups. Then set aside.
  2. Cut up shrimp in a large bowl, fold in the mayonnaise, Old Bay, and chives until just combined. Fill each phyllo cup with the shrimp mixture. Place in the oven to bake for 10-12 minutes. Remove from the oven to cool. 
  3. Combine all ingredients for the remoulade in a bowl. Season with salt and pepper to taste.
  4. Top each shrimp cup with a dollop of remoulade. 
  5. Serve warm or at room temperature and enjoy!
